Cupping vocabulary: separating bitterness from astringency on paper and in the cup

Bitterness is a taste perceived on the tongue; astringency is a tactile drying, puckering sensation. Confusing the two is the clearest sign of uncalibrated tasting notes in written work.

Build your sensory vocabulary in three physically distinct columns. Aroma covers dry leaf, wet leaf, and liquor smells. Taste covers what taste buds register: bitter, sweet, sour, salty, umami.
