Applying a structured tasting method without vague impressions

The structured method moves you from impressions to evidence: record appearance, nose and palate systematically, then justify any quality or style conclusion with specific observations. Practise writing conclusions that cite at least two observations each.

A usable method covers appearance (clarity, intensity, colour), nose (condition, intensity, aroma characteristics) and palate (sweetness, acidity, tannin, body, flavour intensity, finish). Description comes first; conclusion comes second, and every conclusion must cite observations. Calling a wine good quality means showing the evidence: concentrated flavours, balance between acidity and fruit, and a long finish. A note that jumps from colour straight to a verdict skips the reasoning the grid exists to force.

Calibrate with a rewriting drill. Take three commercial tasting notes and rebuild each one on the structured grid, then grade your work with this rubric: every section uses a term from the method rather than a metaphor; intensity words are deliberately chosen, not defaulted to medium; the conclusion cites at least two observations; no region or grape is guessed from flavour alone. Expected observation: the first rewrite takes the longest, and later ones accelerate as the grid becomes automatic.

Explaining wine style: climate, vineyard and winemaking causes

Every style statement should trace to a cause. Climate sets ripeness and acidity, grape-growing choices add concentration, and winemaking choices add oak, lees or blending effects. Learn the chain, not isolated facts.

Climate sets the baseline. Cool conditions slow ripening, so wines show tart fruit, high acidity and lower alcohol; warm conditions push ripeness toward cooked or black fruit, fuller body and higher alcohol. Vintage matters most where ripening is marginal: a cool year in a marginal region yields leaner, sharper wines than a warm one. Grape-growing adds concentration and fruit health, while winemaking layers oak, lees contact, malolactic conversion or blending on top of that base.

Scenario: two Chardonnays. Wine A shows green apple, lemon, high acidity, medium body and no oak character; Wine B shows ripe peach, vanilla and toast, fuller body and lower apparent acidity. The plausible mistake is filing both under oaky Chardonnay because the grape is famous for oak. The better decision is to infer two different causes: A from a cool climate with little or no oak, B from a warmer site with oak ferment or maturation. This matters because style statements only hold when the cause is attached to them.

Food pairing by structure: why colour rules mislead

Pair by structural interaction: sweetness cuts salt and chilli heat, acidity cuts fat, tannin binds with fat and protein, and intensity should match between dish and wine. The colour of the wine is secondary to these mechanics.

Pairing works through measurable interactions. Sweetness softens salt and chilli heat; acidity cuts through fat and refreshes the palate; tannin binds with fat and protein, which softens its grip; high alcohol intensifies chilli burn. Colour rules are shortcuts that fail on structure — a light, low-tannin red can suit fish, and a heavily oaky, full-bodied white can flatten a delicate dish. Intensity matching matters equally: a powerful wine and a subtle dish cancel each other out.

Scenario: salt-and-vinegar battered fish with fries. The plausible mistake is choosing a full-bodied, high-tannin red because red seems to suit rich food. The better decision is a crisp, high-acid white — or a very low-tannin red — because tannin reacts with fish oils and can turn metallic and bitter, while acidity and lightness refresh against the fat and salt. This matters because pairing questions test the mechanism: state which structure meets which dish component and what the mouth perceives, rather than reciting colour shorthand.

White varieties: aromatic, neutral and style-spanning grapes

Group white varieties by what drives their style: aromatic grapes carry perfumed fruit, neutral grapes reflect climate and winemaking, and grapes like Chenin Blanc and Semillon span dry to sweet while keeping acidity.

Sort white varieties into groups. Aromatic varieties — Sauvignon Blanc with green fruit and herbaceous notes, Riesling with floral and lime or stone-fruit perfume — carry their own flavour with little help from winemaking. Neutral varieties, Chardonnay above all, act as a canvas, so climate and oak dominate the final style. Chenin Blanc and Semillon span dry to sweet yet retain acidity, which is exactly what makes them versatile across still, sweet and blended styles.

Turn each profile into a prediction habit: before reading any tasting note, write the two or three signals you expect. For Sauvignon Blanc, expect pronounced aromas, high acidity and green character; for Riesling, expect high acidity with sweetness that may sit anywhere from bone dry to luscious; for Chardonnay, expect climate and oak to decide nearly everything. The trap is overfitting one region's version of a grape — treating all Chardonnay as oaky or all Riesling as sweet — so attach conditions to every generalization you write.

Black varieties: reading tannin, body and ripeness signals

Sort black varieties on a tannin and body ladder: Pinot Noir at the light end, Cabernet Sauvignon at the structured end, with Merlot, Syrah, Grenache and Malbec occupying describable positions between.

Build the ladder explicitly. Pinot Noir sits low: light body, low tannin, red fruit and high acidity. Grenache and Malbec climb toward medium-plus body and softer or darker fruit; Merlot occupies the middle with medium tannin and fleshier texture; Syrah adds black fruit and, in some versions, pepper; Cabernet Sauvignon tops the ladder with high tannin, high acidity and blackcurrant. Blending adjusts the rungs — Merlot softens Cabernet in Bordeaux blends, and Grenache and Syrah reinforce each other in southern Rhône-style blends.

Run a ranking drill: for each variety write a one-line triad — body, tannin or acidity, fruit character — plus one benchmark region, then rank five varieties on the tannin ladder from memory. Next, vary the climate deliberately: a warm-site Merlot or Pinot Noir reads riper and fuller than its cool-site counterpart, so the triad shifts. Two observations to check yourself against: your Merlot-versus-Malbec ranking is reasoned rather than guessed, and you can state which structure — tannin or acidity — each variety leads with.

Matching regions to grapes: a decision table for label clues

Region questions reward one chain: place, then signature grape, then climate, then style cue. Burgundy means Pinot Noir or Chardonnay in a cool climate; Rioja means Tempranillo with oak; Marlborough means pungent Sauvignon Blanc.

Label conventions speed the chain. Many European regions name the place and imply the grape, while many New World labels name the grape directly. Learn blends as blends: Bordeaux pairs Cabernet Sauvignon with Merlot; southern Rhône-style wines combine Grenache and Syrah. Then attach the climate so ripeness follows: a moderate maritime Bordeaux differs from a warm, sunny Australian Shiraz site in fruit character and body, even before oak or bottle age shifts the comparison further.

Work the table below in both directions. Cover the grape column and recall it from the region; then cover the region and recall where each grape is benchmark. Sparkling, sweet and fortified styles, plus service and readiness checks

Distinguish production methods: tank versus traditional method for sparkle, late harvest or Botrytis or drying grapes for sweetness, and fortification timing for Port versus Sherry styles — then match service temperature to each wine's structure.

Sparkling styles differ by production route. The tank method keeps fresher citrus and green-fruit flavours because the second fermentation happens in a closed tank; the traditional method ferments each bottle, and extended contact with lees adds bread, biscuit and toast characters. Sweetness arrives by different routes: late harvest, Botrytis, or drying grapes concentrate sugar and flavours. Fortified wines raise alcohol with grape spirit, and the timing decides the style: fortifying before fermentation finishes leaves residual sugar, while fortifying a wine that fermented dry keeps it dry with complexity developing through ageing.

Service follows style. Chill sparkling and light, dry whites well; serve fuller whites slightly less cold so their aromas open; serve full-bodied reds at cool room temperature rather than warm.
